Ingredients:

  • 1/4 cup cold water
  • 4 large eggs, separated
  • 1 cup granulated sugar, divided

  • 1 tablespoon lemon zest
  • 1/4 teaspoon salt
  • 1 cup heavy cream
  • 1/4 cup honey
  • Lemon slices and whipped cream for garnish (optional)

Directions:

  1. Prepare the Crust:
    • Preheat the oven to 350°F (175°C).
    • In a medium bowl, combine the graham cracker crumbs, sugar, and melted butter for the crust. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish. Bake for 8-10 minutes, then remove from the oven and let cool completely.
  2. Make the Filling:
    • In a small bowl, sprinkle the gelatin over the cold water and let it soften for 5 minutes.
    • In a heatproof bowl, whisk together the egg yolks, 1/2 cup of sugar, lemon juice, lemon zest, and salt. Place the bowl over a pot of simmering water, making sure the bottom of the bowl doesn’t touch the water. Cook, whisking constantly, until the mixture thickens and coats the back of a spoon, about 8-10 minutes. Remove from heat.
    • Add the softened gelatin to the lemon mixture and whisk until dissolved. Let cool slightly.
    • In a separate bowl, beat the egg whites until soft peaks form. Gradually add the remaining 1/2 cup of sugar and continue to beat until stiff peaks form.
    • In another bowl, whip the heavy cream until stiff peaks form.
    • Gently fold the whipped cream into the lemon mixture until combined, then fold in the beaten egg whites.
  3. Assemble the Pie:
    • Pour the filling into the cooled crust and smooth the top with a spatula. Refrigerate for at least 4 hours or until set.
  4. Serve and Garnish:
    • Before serving, drizzle the honey over the top of the pie and garnish with lemon slices and whipped cream, if desired.
